Chicken Quinoa Soup

Yield: 4 – 6 servings

INGREDIENTS

2 Tbsps. Olive oil

1 medium onion, chopped

1 cup sliced celery

1 cup sliced carrots

2 cloves chopped garlic

½ cup white wine, optional

½ cup quinoa, rinsed

4 cups chicken stock

2 cups cooked chicken, diced

1 tsp. thyme

1 tsp. parsley

DIRECTIONS

  1. In a large heavy stock pot over medium-high heat, heat the olive oil until it shimmers.
  2. Add in the onion and celery and sauté until soft, about 5 – 7 minutes.
  3. Season with salt and pepper to taste.
  4. Stir in garlic and wine and cook another 5 minutes.
  5. Add in quinoa, carrots and chicken stock. Bring to a boil and then reduce heat to a simmer, cooking until carrots are tender, about 20 minutes.
  6. Stir in herbs and chicken. Simmer until chicken is heated through and the flavors melt together.  Add more salt and pepper if needed. Serve hot in your Tara at Home Mug or take it on the go in a Seal the Meal!
