INGREDIENTS
3 cups leftover turkey, shredded
¾ cup celery, finely chopped
¼ cup red onion, finely chopped
½ cup dried cranberries
½ cup pecans, coarsely chopped
2 Tbsp fresh parsley, finely chopped
¾ – 1 cup greek yogurt
2 tsp whole grain mustard
3 tsps apple cider vinegar
salt and pepper, to taste
DIRECTIONS
- Combine the turkey, celery, red onion, cranberries, pecans, and parsley in a Tara at Home 3 qt bowl.
- In a separate bowl, whisk together the yogurt, mustard, and apple cider vinegar. Add salt and pepper to taste.
- Pour the dressing over the turkey mixture and toss well. Chill for at least 20 minutes before serving.
- Enjoy with sliced cucumbers, on crackers, on a bun or right out of the bowl!
