Turkey Salad with Greek Yogurt

Prep Time: 10 minutes
Yield: 6 servings

 INGREDIENTS

 3 cups leftover turkey, shredded

¾ cup celery, finely chopped

¼ cup red onion, finely chopped

½ cup dried cranberries

½  cup pecans, coarsely chopped

2 Tbsp fresh parsley, finely chopped

¾ – 1 cup greek yogurt

2 tsp whole grain mustard

3 tsps apple cider vinegar

salt and pepper, to taste

DIRECTIONS

  1. Combine the turkey, celery, red onion, cranberries, pecans, and parsley in a Tara at Home 3 qt bowl.
  2. In a separate bowl, whisk together the yogurt, mustard, and apple cider vinegar. Add salt and pepper to taste.
  3. Pour the dressing over the turkey mixture and toss well. Chill for at least 20 minutes before serving.
  4. Enjoy with sliced cucumbers, on crackers, on a bun or right out of the bowl!
