RAINBOW RIBBON SALAD

Ingredients 

  • 1 Zucchini
  • 1 Yellow Squash
  • 3 Large Rainbow Carrots
  • ¼ Cup Extra Virgin Olive Oil
  • 1 Tbsp. Fresh Lemon Juice
  • ½ tsp. Salt
  • ¼ tsp. Black Pepper
  • 2 oz. Pecorino Romano Cheese

Directions

  1. Using your Tara at Home® Serrated Peeler, shave the zucchini, yellow squash and carrots lengthwise into thin ribbons.
  2. Toss ribbons together in an 11×7 Tara at Home Baker.
  3. In a 1 qt. Tara at Home Bowl, combine olive oil, lemon juice, salt and pepper. Drizzle mixture over vegetables in the baker and toss to coat.
  4. Garnish with long shavings of Pecorino Romano cheese and serve.
