Ingredients
- 1 Zucchini
- 1 Yellow Squash
- 3 Large Rainbow Carrots
- ¼ Cup Extra Virgin Olive Oil
- 1 Tbsp. Fresh Lemon Juice
- ½ tsp. Salt
- ¼ tsp. Black Pepper
- 2 oz. Pecorino Romano Cheese
Directions
- Using your Tara at Home® Serrated Peeler, shave the zucchini, yellow squash and carrots lengthwise into thin ribbons.
- Toss ribbons together in an 11×7 Tara at Home Baker.
- In a 1 qt. Tara at Home Bowl, combine olive oil, lemon juice, salt and pepper. Drizzle mixture over vegetables in the baker and toss to coat.
- Garnish with long shavings of Pecorino Romano cheese and serve.
