1 packet Not Your Mother’s Cucumber Dip Mix
1 cup chickpeas
1 Tbsp. lemon juice
2 Tbsp. tahini
3 Tbsp. olive oil, plus some for drizzling
- Set aside ½ tsp of dip mix in a rammie to use for garnishing. Add chickpeas, lemon juice, tahini, olive oil and remaining dip mix to a food processor and blend. Add chickpea liquid or water as needed to allow the machine to produce a smooth puree.
- When smooth, spoon into 8oz. Rammies. Top with olive oil and ½ tsp dip mix. Serve with fresh vegetables and bread.
